Our Team

ANTHONY SILVESTRI

Owner / Executive Chef

Chef-Owner Anthony Silvestri started as a busboy at Eddie’s on Long Island and has been at it ever since. His dedication and creativity has allowed him to quickly rise through the ranks from busboy to head chef in some of New England’s most exciting, cherished, and well-respected kitchens.

The fare Chef Anthony creates is anchored in his passion for preparing truly great food for those who seek it. His fare is never fussy but always distinctive. His commitment to honoring authentic ingredients and the life changing experience of cooking his way through Asia years ago, weave through his menu.

If you ask his colleagues what they think of Chef Anthony, they’ll tell you he’s salt of the earth – humble, hardworking, and he’ll teach you anything and everything he knows. We are truly fortunate to have him at Pate’s as Executive Chef and Owner and we are thankful for all that he shares, in and out of the kitchen.

Carlos Morocho

Executive Chef

Born in Brooklyn, NY and raised by his grandmother in Ecuador, Chef Carlos found his passion for food after finding his way back to the States and pursuing a career that his parents had worked in before.

Going to culinary school and working in NYC opened the doors to endless opportunities. Starting at Del Frisco’s Grill as part of the opening team, to Buddakan, Clement at the Peninsula Hotel, to the Mayflower Grace where he honed his craft and quickly moved up the ranks to Executive Sous Chef.

Working in the fine dining scene, he found himself at Cuvée, the only Relais & Chateaux on Cape Cod. There, his passion for seafood, local farmers and seasonal ingredients validated the path he is pursuing.

Working alongside Chef Owner Anthony at Pate’s, he’s able to express his culinary experience while being honest to the humble ingredients Cape Cod has to offer. In his free time, he loves trying new things, whether it’s local wine, discovering new wine producers or supporting local restaurants, it keeps him inspired and motivated to create new dishes.

Jamie Edwards

Partner

Jamie Edwards is an absolute legend. From his start in Portland to his ten-year stint in San Diego, everywhere Jamie goes, he leaves behind a lasting legacy.

Jamie is known for his mastery of the craft cocktail. Rest assured, if Jamie makes it, it is the perfect first sip and every sip thereafter. Not only is he a mixologist expert, but a sommelier as well. His knowledge of libation from cocktails to wine to craft beers is among the best, anywhere.

Since returning to the Cape a decade ago, Jamie has continued to perfect his craft at some of the Cape’s most beloved institutions.

PATES Legacy

From July 1st, 1957, there have been two owners of Pate’s, Cloyde Pate followed by the Gardner family of Chatham. Cloyde Pate opened the doors to what would soon become one of Cape Cod’s most beloved restaurants. Once a cozy hamburger and ice cream stand, Pates grew to be a place of celebration, camaraderie, and community. From the bonds staff made during countless summer seasons, to the engagements, anniversaries, birthdays, and family gatherings, Pate’s has been a backdrop for exceptional moments and people.

The new owners of Pate’s have made a long term investment to upgrade the space, making it more user friendly, ready to accept you as our guest. A renovated space to create new memories and friends, Pate’s is still that very special place. It is our distinct privilege as the new curators of this grand tradition to work tirelessly to build a vibrant Pate’s future.
